on a terribly rainy day i headed to pizzeria defina for some pizza and pasta with a friend — the perfect answer to the afternoon’s sullen mood. we opted for the wild mushroom linguini and the pumba pizza, a relatively new addition to their menu. the former came with truffle sauce and was topped with shavings of parmiggiano reggiano and lashings of black pepper. our pizza starred wild boar meatballs, san marzano tomatoes, mushrooms, caramelized shallots and both fior di latte and pecorino cheeses. defina offers both a roma and a napoletana crust; we went for the thinner roma version as naples-style crusts are more readily available across the city. both dishes were enjoyable, if heavy, and i liked the fact that the boar didn’t overshadow the other flavours in the pizza (especially since i’m not a big meat-eater).
